A funny thing happened yesterday and I just had to share it. First of all, you have to realize that my brain is constantly ticking away. No joke - my thoughts wander so randomly at times, that I find myself eventually contemplating scenarios at an opposite end of the spectrum from where I began. So with that said, on with the show.
My friend Diana, posted that she was making the cookie recipe listed below. I immediately "Liked" her post and commented how I loved that specific recipe and had used it with great results. Afterwards, I busied myself with tasks around the house (OK, I was really in the bathroom) and starting thinking of her making those delicious cookies. Which led me to reminiscing about the last time I made them. It had been a few weeks, beginning of November to be exact.
Hmmm, I need a lot of butter to make a batch, I'm currently out of it. Butter seems to be getting expensive lately, everything is. What would happen if something occurred in the world and I could no longer have access to buying butter? Seriously, no butter for ANY one at ANY store. Could that happen?
Butter is made from cream. One can gather cream from milking a cow and letting the cream seperate from the milk. I've seen cows before, I even pet a few. Do all cows give milk for no reason, at a certain age or do they have to have a baby first? Well then, I'd have to get a bull too. Will the cow produce milk forever or only as long as it's calf is around? "Honey? Google if all cows produce milk"!
See totally random thinking, about the wildest situation - right? I hope that I'm not the only one whose brain cranks out imaginary scenarios and lives in them for moments. Anyhoo, now that I've distracted you a little, I'll give you a recipe that I originally found on
Allrecipes but changed just a tad.

The Best Rolled Sugar Cookies
1.5 cups butter, softened
2 cups white sugar
4 eggs
2 teaspoons vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup
confectioner's sugar
extra
confectioner's sugar (for rolling cookies)
- In a large bowl, cream together butter and sugar until smooth.
- Beat in eggs and vanilla.
- Stir in the flour, baking powder, and salt.
- Cover, and chill dough for at least one hour. (add more confectioner's sugar if needed)
- Preheat oven to 400 degrees F (my oven runs hotter, I use 375 degrees F) .
- Roll out dough on a confectioner's sugar dusted surface 1/4 to 1/2 inch thick.
- Cut into shapes with any cookie cutter.
- Place cookies 1 inch apart on ungreased cookie sheets (they will puff a little).
- Bake 6 to 8 minutes in preheated oven. (I bake mine for 6, but I prefer soft cookies) C
- Cool completely.
*I can't stress enough that more sugar = sweeter cookies.
